Chili.
Pot roast but heavy on the vegetables: quartered potatoes or little (new) potatoes, carrots (bag of baby carrots), quartered onions, mushrooms and green beans. Fill the pot with vegetables, however big of a beef roast you can afford on top & put dried apricots on top of the meat—gives a great flavor to the contents & any juices from which you can make gravy.

Pork shoulder is usually a cheaper cut of meat. Cut off as much of the big slabs of fat as you can. Put it in the crockpot (may have to cut up some to make it fit). Cook until done, several hours. Pour fat off into jars/cans to refrigerate and toss in the trash, never down the sink. Cut up into slices for dinner, chunks for stews and/or casseroles, shred for BBQ sandwiches with BBQ sauce and coleslaw.

1 bag frozen meatballs, 1 jar grape jelly, 1 jar chili sauce. Stir it all up. Cook on high for 4 hours.

Do the same as for pot roast, but with chicken thighs and herbs or sliced apples instead of apricots.
