How do you get your kids to eat their greens?

How do you get your kids to eat their greens? My kid will not touch anything green and she really needs too…

Put cooked vegetables, including greens, with butter, cream or half and half, and broth, and purée in a blender. Serve as soup heated with croutons on top.

Grate/chop vegetables into tomato sauce for use over spaghetti, in lasagna, or wherever.

Put it in omelets with cheese & hide in a breakfast sandwich.

Make a pot pie with hamburger, chicken or just vegetables in a pie crust. Mix meat, vegetables and chopped onions in canned, undiluted cream of chicken/celery/mushroom soup or tofu blended with broth/bouillon and seasonings. Put in pie shell. Top with another pie shell or mashed potatoes and grated Parmesan cheese and bake until cooked through, about 30-45 minutes.

Make spinach dip & serve with sturdy chips.

Make fresh or buy frozen spanakopita.

Put chopped or pureed greens in meatloaf or hamburger patties. I also add a Tsp or TBSP of paprika, Worcestershire sauce, soy sauce, minced onions, dry mustard, ketchup and an egg.

Serve some in green salads if she’ll eat them with croutons, pine nuts, sunflower seeds, or crunchy tortilla strips and ranch dressing.

Cook and puree some spinach and add it to eggs to make green eggs and ham, add to sauces and smoothies where the taste is masked, or make dishes with greens like coleslaw, salad with blueberries, strawberries, feta and balsamic dressing or kale chips (baked crunchy like chips). Don’t make it a big deal or draw attention to the greens just eat and enjoy and she’ll likely mimic or at least want to try some of yours

There’s worse things in life than not eating greens. Don’t force her. Give her a kids vitamin if need be. Pick your battles!!!

I sneak the leafy greens into the food. Spinach and sweet potatoe leaves chopped up in this strips and mix it in sauces for pizza, pasta. Toss it in soups

We’ve always had the rule in our house that you have to try it before you say no. My son has to take at least one bite of whatever I give him and if he doesn’t like it I don’t make him eat it, it works for us. He also knows if he doesn’t eat a majority of his dinner he doesn’t get desert either.

Three bites if you don’t like it you don’t ever have to eat it again. They change their mindset quickly and will usually like it.
