What are your favorite crock pot meals? Fall is finally arriving and I love crock pot meals this time of year!
Pot roast: cut potatoes in quarters or chunks (or use new/little potatoes), add a small bag of baby carrots and quartered onions to the pot. Put meat on top. Add mushrooms if desired. Cover roast with dried apricots & cook. You can add the mushrooms and/or green beans later so they don’t get soggy. I usually make brown gravy from a packet adding any juices.
Almost any kind of chili recipe works in a crock pot.
I cook a pork shoulder in the crockpot after cutting off as much of the fat as possible. Depending on the size of your crockpot you may have to cut it up some to make it fit. You will still have a bunch of liquid fat in the pot at the end. When it’s done I cut slabs or big chunks of meat to use as a main dish, smaller pieces for casseroles, and shred a lot for BBQ sandwiches.
You can also slow cook ribs in BBQ sauce this way.
My BF puts chicken in with mushrooms, chicken broth and white wine, maybe spices (like the Simon & Garfunkel song: “parsley, sage, rosemary & thyme,” poultry seasoning, or whatever you like). You can add potatoes, onions and/or garlic if you want. After meat is cooked, serve as is or thicken the winey broth with cornstarch and cream.
Someone I knew used to make a version of Seafood Newburg in the crockpot.
You can also make soups in it, but I usually do my soups on the stove.
Also good for keeping mulled wine, Swedish Glögg, apple cider (regular, spiced or hard), any spiced tea (chai, Russian tea, spiked or not, etc.) warm on low.
