I need some new dinners ideas! I am tired of making the same thing all the time.
Try some vegetarian foods. Saves money & is healthy too!
Beans & rice (Moros y Cristianos): Heat Goya black bean soup and pour over cooked 90-second basmati rice. Squeeze some fresh lime juice on top, add grated onion and cilantro if you want. My kids loved it, but only the Goya brand soup.
Pasta salad: Mix cooked pasta (I like whole wheat bow tie) with sun dried tomatoes, Feta cheese, cilantro leaves and olive oil to coat. Serve chilled or room temperature.
Pot pies: Pie crust shells + cooked chicken + cream of (chicken, celery or mushroom) soup—do not dilute + small bag frozen mixed vegetables + chopped onion (use dried minced onion from the spices section in a pinch). Mix & pour into 2 pie crust shells. Top with instant (or homemade!) mashed potatoes and a sprinkling of Parmesan cheese. Bake 30 minutes or until heated through.
Alternatively, use condensed tomato soup or bisque and cooked hamburger instead. Great for using up leftover meat & vegetables. You can also add a can of beans in addition to or in place of meat or poultry.
Summer rolls: Get rice wraps, cellophane noodles (mung beans noodles), ponzu sauce and enoki mushrooms from an Asian grocery. Cut celery, zucchini and/or yellow squash into matchsticks and buy a bag of shredded carrots. Shred some chicken or fish.
Cook noodles according to directions and cool. Put all ingredients out. Soak individual rice wraps on a dinner plate full of water until soft. Fill with ingredients and roll up like a burrito. Dip in Ponzu (or soy) sauce and enjoy! Great for hot summer days or nights. Once rolled, they keep remarkably well in the fridge for a day or two.
Quiche: pie crust shells+ 2-4 eggs, 2/3 cup cream, 1 cup shredded cheese/es, 1 cup chopped onion. Beat eggs, add cream, cheese and onion. Gruyere is traditional, Swiss works fine, and you can shred/grate whatever cheese you have on hand and include—even the ones that have gone hard. Add whatever you like from the following list:
Ham, bacon pieces, crumbled sausage, artichoke hearts, spinach,
Greens, mushrooms, diced tomatoes or salsa, most any vegetables cut in bite-sized pieces, hot sauce or spices to taste.
Fill pie shells and bake approximately 30 minutes until set. Breakfast, lunch, appetizer, dinner, snack, hot or cold. Save calories and bake in a greased pan without the crust. Add salad & a baguette.
Crepes: make Bisquick pancake batter with twice as much (or more) liquid. Put 1/2 ladleful of batter in nonstick pan (I still spray with oil or use butter) and tilt to coat. Turn over when crepe starts to brown. When you have a stack, put in freezer. Microwave a minute to thaw (they should be pliable). Fill with whatever you like and roll up, bake in oven until heated through and crispy.
My fave fillings:
White sauce, chopped onion & celery, tarragon, salt & pepper.
Pears & dark chocolate, top with whipped cream or ice cream
Lemon curd and crushed almond, lemon, coconut or butter cookies.
Omelet made with salsa, ham, bacon or sausage and cheese.
Crêpes Suzette: Spread with apricot jam or orange marmalade. Fold in half, then again, nuke until warm, about 15-30 seconds, and pour Grand Marnier over the top. Put liqueur in a spoon and hold a match underneath until it catches fire, then pour over for a more dramatic dessert flambé.
Thinly sliced ham & cooked asparagus spears. Pour Hollandaise sauce over top.
This was definitely me a few years ago same couple thing every night or cereal because I didn’t want spaghetti again lol
I started looking up recipes everywhere, google, facebook, TikTok and YouTube. There have definitely been some gross recipes (I’m very picky lol) but that’s why when trying a new recipe ALWAYS make sure you have an emergency pizza in the freezer lol. I’m also now the best cook out of everyone I know
And I’m making my own recipe binder to be passed down.

Fajitas. 1 lb. Hamburger, thinly sliced pork loin, chicken, etc., 1 med onion sliced, 1 red pepper or orange or yellow, and 1 green pepper, cut into strips, 1 pkg fajita seasoning. Cook meat over medium heat until cooked through. Drain fat if necessary. Add fajita seasoning and enough water to keep it from sticking
Add the onion and peppers and cook to doneness desired. Can put it over fritos etc. Serves 4
I make up several bags of it and freeze it, and then I just warm it up. I have also made up bags of peppers and onions and freeze
We like the pork loin. May have to spray skillet with Pam to cook the pork and chicken
