I like to have things on hand: chicken, ham, hamburger, sausage, tuna, little potatoes, lettuce, bell peppers, bread, broccoli, frozen chopped spinach, celery, frozen mixed vegetables, cherry or grape tomatoes, brown rice, quinoa, whole wheat egg noodles & spaghetti, stew beef if on sale, frozen mixed vegetables, celery, whole wheat wraps/tortillas, apples, oranges, other fruit
You can make tuna salad with celery, celery seed, get some water chestnuts and mayo; salade nicoise with Greek olives, tomatoes, hard boiled egg, lettuce and vinaigrette; hot tuna casserole with celery, onions, frozen peas, egg noodles and cream of celery soup, maybe cheese, maybe crushed potato chips on top.
Chicken a l’orange, chicken salad (add celery, halved grapes or raisins, pecans or walnuts, mayo & curry powder), chicken tarragon roll-ups with onions, white sauce, celery, tarragon & roll in wheat or spinach tortillas. Chicken soup with onion, mixed vegetables, chicken broth/stock/bouillon. Chicken pot pie with cut up chicken, mixed vegetables, cream of chicken condensed soup in a pie shell with mashed potatoes on top
Hamburger goes in spaghetti sauce with onions, maybe mushrooms, red wine, peppers, serve with salad or creamed spinach. Pot pie same as chicken but use tomato sauce or tomato soup, top with cheddar. Use sauce in lasagna and add shredded veggies like zucchini, spinach, shredded carrots, mushrooms, etc. Make stuffed peppers with rice, hamburger, onions, whatever else you like. Tortilla soup with bouillon, chili powder, cumin, corn, black beans, onions, tomatoes, celery, squash; top with cheese, sour cream, tortilla strips.
Use stew beef for crock pot roast with baby carrots, quartered onions, mushrooms, little potatoes or quartered regular potatoes; top with dried apricots for great flavor. Or crock pot beef burgundy: Pearl onions, baby carrots, mushrooms, bacon pieces, red wine and beef stock & serve over egg noodles. Or use to make stroganoff with mushrooms, sour cream, onions over egg noodles. Serve with broccoli or salad.
Hot dogs, pork n beans and brown rice for beanie-weenies. Indian vegetable packets heated up & serve over brown rice.
